#810 Ambrosia Salad

Maybe some of you remember this from childhood, or maybe you ate a bowl of it last week, but I just had the best ambrosia salad of my life! I have always liked ambrosia salad since I was very little and I still like it today. I know, it’s not really a salad in the healthy vegetable sense and even though it is loaded with fruit, the fact that it is all tied together with whipped cream and marshmallows doesn’t really add to the health benefits, but it’s still good nonetheless.

If you look at it the way I do, that blend of marshmallows, oranges, maraschino cherries, coconut and pineapple does have some health benefits to it. Ambrosia salad makes us happy and that, in and of itself, is enough to earn it a spot on my plate.

You can actually find ambrosia salad at almost any grocery store deli and on some salad bars in those buffet style restaurants. I had mine in Vegas and, like I said before, it was the best ambrosia salad I have ever eaten. It must have been the two kinds of oranges, or maybe it was the fresh pineapple as opposed to canned; whatever it was, it definitely made a difference.

Now, for those of you who don’t know what it is or that want to make it at home, I am going to go a little Guy Fieri on you right now. First, grab yourself a large bowl and a wooden spoon (actually any spoon is good). Now take a can of pineapple chunks, a small jar of maraschino cherries, a can of mandarin oranges and a couple of fresh clementines that you have segmented. Throw all of that in your bowl and stir it around. Notice how healthy and fresh that looks? Now toss in a handful of coconut flakes and some marshmallows and stir in a bowl of whipped cream. That’s it! You have quick and easy ambrosia salad just like grandma used to make (if she worked the buffet at a Vegas casino that is!).

Even if you can’t cook or bake a thing, anyone can enjoy whipping up a batch of ambrosia salad and watching your guests’ eyes light up and their smiles grow when you serve it to them in those dainty little dishes you got as a wedding gift but never thought you would use. Now grab a spoon and enjoy the fruits (and other stuff) of your labor.
